Enlighten and satisfy dinner guests with fresh bell pepper and potato kabobs. Relatively simple to make and sweet to taste, these kabobs will brighten up your plate and will have you licking the peppers’ flavor off the stick.

The kabobs require a few ingredients to make and the preparation process is relatively short as well. Since this recipe is so simple to prepare, it is excellent try when throwing together a last-minute dish for a party.

Bell Pepper Kabobs

Serves: About 4

Duration: About 25 minutes

3 small red potatoes, sliced in quarters

6 bell peppers, sliced in quarters

⅓ cup canola oil

1 tablespoon Italian salad dressing

Heat oven to 350 F.

Begin by slicing each red potato into quarters, and then place the sliced potatoes in boiling water for about 10 minutes.

While the potatoes are cooking, cut the bell peppers into quarters. Once the potatoes are cooked and soft, remove them from the water and set aside on a plate.

Take a 6-inch-by-6-inch sheet of aluminum foil to bake the sliced bell peppers and potatoes on.

Curl the edges of the foil and then place the sliced bell peppers and potatoes on the sheet. Drizzle the potatoes and pepperse with canola oil after they are all distributed on the sheet.

Once the kabobs are thoroughly oiled, pour the Italian salad dressing over the bell peppers and potatoes for flavor.

The kabobs are ready to be baked in the oven. Cook for about 10 minutes or until the vegetables are toasty.

Once the sliced bell peppers and potatoes are sizzling and slightly browned, they are ready to be placed on a stick to officially upgrade to kabob status. Make sure you use a fork to pick up vegetables to pierce with the kabob stick because the vegetables will be hot. Place however many slices you would like on each stick, alternating between potato and bell pepper.

This recipe and approach to assembling kabobs is fairly modifiable for adding chicken or any other vegetables. If you would like to make your kabobs spicier, simply substitute any spicy dressing or sauce for Italian season dressing.
