Have a big hunk of these peanut butter and banana sandwiches

Anna Puccinelli

Elvis Presley’s appetite for fried peanut butter and banana sandwiches may have been what he was talking about when he sang “Big Hunk O’ Love.”

This grilled twist of the classic peanut butter sandwich includes salty bacon, warm gooey peanut butter and sweet fried bananas squished between buttery toasted bread.

The King’s sandwich calls for white bread and peanut butter, but can be adapted to create a healthier meal. Wheat and whole grain bread can be used along with almond butter instead of peanut butter.

Other sandwich fillers like fresh sliced strawberries can be added to this sandwich to balance out the fried taste. For those who want a sweeter taste, melted chocolate chips taste savory with the salty bacon.

Ingredients

2 Slices of white bread

Butter to spread on bread

2 Slices of bacon

2 Tablespoons peanut butter

1 Banana

Directions

Heat a pan on high and place bacon in it. When the sides begin to curl, flip bacon with a fork. When bacon is cooked to desired crispness, remove from pan and place on a paper towel to absorb the fat.

Cut the banana into thirds and each of those thirds in half. Dust each slice with flour and in the same pan, fry using the bacon fat. When the banana pieces are golden brown, remove from heat and set aside and reduce heat to medium.

Butter one side of each slice of bread. Spread the peanut butter on the unbuttered side of one piece of bread and layer the bacon and bananas on top of the peanut butter. Add any additional toppings now.

Put the other slice of bread on top of the sandwich fillings with the buttered side facing out.

Wipe the pan out with a paper towel and grill the sandwich until golden brown and serve immediately.
